MY PLANTAIN TARTS ❤️ Ingredients: 2 really really ripe plantains 1 sheet puff pastry 1/2 tsp vanilla 1/2 tsp essence Sugar your desired sweetness ( I used coconut sugar ) Dash of nutmeg Vegan egg replacement (I used just egg or Trader Joe’s simply eggs) A little red food color (I used beets) Preheat oven to 400 degrees. Remove plantains outer skin and place in a bowl. Use a potato masher to mash plantain. The texture should be slightly smooth with plenty of lumps. Add your sugar, spice and food coloring. Combine set aside. Sprinkle some flour on a smooth surface. Place puff pastry on the floured surface and use a rolling pin to spread dough. Roll back and forth and side to side. Once desired size is reached, cut a small enough square for one tart. Use a small spoon to fill each square. Do not overfill. Fold the dough in half and use a fork to flatten the dough edges. Continue with the rest. Place on a cookie sheet lined with parchment paper. Brush each tart with vegan egg wash. Bake at 400 degrees for 15 - 18 minutes. Remove allow to cool.
